We had a party for some friends. David bought four large boxes of blueberries just because they were on sale ($3/box) -- the big boxes, not the dinky little square boxes. Only problem was they were going moldy. We scrubbed some off and salvaged some, then I did what Mommy would have done. I made blueberry muffins.
Now I've never really baked anything in my life, nor do I own muffin tins, but I read the directions on an old package of Aunt Jemima pancake mix. Had to go out and buy baking soda, brown sugar, little cupcake or muffin cups. Of course when I got home I realized we already had brown sugar (in a quart container, who knows how long it had been in there but at least it wasn't all hardened up in a brick), and baking soda. The expiration date on the baking soda was either June '01, or June 4, 2001. Either way I threw it away. This will probably be the one and only time I use this baking soda I bought. The Betty Crocker cupcake holders were "foil" with white paper inside. Were you supposed to take the paper out and bake right in the foil? Or in the paper? At least I didn't start a fire.
The muffins turned out ok. They don't have much taste, but at least I didn't have to throw away the blueberries. Should I take them to work and pawn them off on my co-workers?
